Mojito is the quintessential Cuban cocktail, born in Havana in the 1940s. The freshness of mint, the acidity of lime and the sweetness of agricultural rum come together in perfect harmony. It is the most ordered summer cocktail in the world, and for good reason: its simple recipe hides a precise technique that makes all the difference.
Preparation
Put the mint, lemon juice and syrup in a highball glass. Gently muddle to release essential oils without tearing leaves. 2. Fill 2/3 full with crushed ice. 3. Pour the rum over the ice. 4. Top up with cold sparkling water by gently pouring. 5. Mix with a bar spoon (2-3 movements from bottom to top). 6. Garnish with a sprig of mint slammed into the palm and a slice of lime. 7. Serve immediately with a straw.
Never crush the mint violently — you would get bitterness. Always use freshly squeezed lime juice, never in a bottle.
