Paloma, which means dove in Spanish, is the most consumed tequila cocktail in Mexico - well ahead of Margarita. Refreshing and sparkling, it combines blanco tequila with the acidic freshness of soda and grapefruit. Simple to make, it offers a perfect balance between bitterness, acidity and lightness.
Preparation
Optional: Frost the edge of the glass with salt by rubbing a lime wedge and then soaking the rim in a saucer of salt.
Fill a tumbler glass with ice.
Pour in the tequila and lime juice.
Complete with fresh grapefruit soda.
Mix gently with a spoon.
Decorate with a slice of grapefruit or lime zest.
For a more natural version, replace soda with fresh grapefruit juice and sparkling water. Choose a 100% agave blanco tequila for a purer taste.
