The Clear Colada is a modern and elegant reinvention of the famous Pina Colada. By clarifying the mixture through a coffee filter or an etamine, we obtain a cocktail of crystalline clarity that surprises by its appearance while preserving the tropical and creamy flavors of the original. A bartender cocktail moves forward that impresses guests.
Preparation
Pour the white rum, coconut cream, pineapple juice and lime juice into a shaker.
Mix everything well without ice to homogenize.
Filter the mixture using a coffee filter, an etamine or a fine cloth to slowly clarify it.
Once clarified, pour over ice cream into a tumbler type glass.
Mix gently.
Decorate with pineapple zest, a dried leaf or a twist of lime.
The clarification process takes about 30 to 45 minutes but gives a crystalline and elegant look. You can also use a clarifying jelly or milk for further clarification.
