Caipirinha is the national cocktail of Brazil, prepared with cachaca - Brazilian sugar cane spirit. Her name means country girl and she was born in the countryside of Sao Paulo in the early twentieth century. Acidic, sweet and refreshing, it is perfect for festive and sunny atmospheres.
Preparation
Cut the lime into quarters and place them directly in an old fashioned glass.
Add sugar.
Crush everything with a pestle to release the juice and oils from the lemon.
Add looted ice or ice cream to the top of the glass.
Pour the cachaca.
Mix gently with a spoon.
Use a quality cachaca for a rounder, more aromatic taste. Looted ice gives a more refreshing texture and melts gently into the cocktail.
